About Zylberschtein’s

Owner & Baker, Josh Grunig

I am a San Francisco native and graduate of the San Francisco Baking Institute with extended studies in Paris at the Ecoles Gregoire Ferandi. I moved to Seattle in June of 2012 to work as a Night Manager at Grand Central Bakery. In 2014, I branched out on my own and began Pocket Bakery, a pop-up bakery, in the Central District area of Seattle. After six months of growing success, I formed Standard Bakery as a way to offer sourdough loaves and classic American treats wholesale to local Seattle coffee shops and grocery stores. In October 2016 Standard Bakery found a permanent home in the Pinehurst neighborhood of Seattle, where we operated a walk-up window for fresh baked goods, coffee and sandwiches.

In fall 2018, I decided to realize my dream of opening a Jewish Deli, focusing on recipes inspired by my family’s past. Zylberschtein’s Delicatessen & Bakery opened in spring 2019, after a successful Kickstarter campaign, supported in a huge part by the the Pinehurst neighborhood. This new venture gives me the opportunity to offer a Jewish Deli menu that is all about comfort food and nostalgia, from our exceptional house-made breads and bagels to cured meats and pickles (my dad’s specialty). and of course our fresh baked pastries. I have always felt such tremendous gratification by sharing food with others.

I live in Seattle with my wife Rachel and daughters Georgia and Marigold, who you can often find with me at the deli on the weekends.
